Low fat, low carb, High Fiber, Spicy Turkey Meatballs
Ingredients:
20oz Ground Turkey Breast (Key is BREAST)1/4-1/2 cup of Oat Bran (Quaker brand is good)2 Large Egg Whites (Entire egg is good too, but wont be as healthy)2-3 cloves of Garlic, finely mincedMinced Onion (1 tsp)Red Pepper Flakes (2 tsp)Garlic Salt (2 tsp)Oregano (1 tsp)Cayenne Pepper (1 tsp)Olive Oil (1 tbsp)1/2 of a red bell pepper (finely diced)Salt (2 tsp)Black Pepper (1tsp)
Directions:1. Preheat oven to 350 F2. Mix all the ingredients together with your hands or spoon3. Make 1/2 inch meat balls or larger if you want.4. Bake for approximately 15 minutes.5. Let cool and serve!
I am definitely a health freak and I always try to find recipes that are super healthy. This definitely works for me because I have been trying to incorporate more protein into my diet. Entire pieces of large chicken breasts just dont do it for me. Too much of a meaty taste. But I found this recipe and decided this is how I want to incorporate more protein into my daily diet. Easy on the go meatballs! Many people use BREADCRUMBS for meatballs, but I substituted bread crumbs with Oat Brans. It is different from oatmeal, so becareful not to buy OATMEAL but OAT BRAN. Tastes just as good and lowered the calories/carbohydrate intake and increased the amount of FIBER. Can you believe it? A meat dish that offers FIBER as well. Yeah I am definitely glad for this recipe! Egg whites also ensure you have a lower intake of cholesterol and it tastes just as good and the meatballs stick together finely. The spicy peppers give it a great kick. Serve with ketchup or bbq sauce or you can even serve it over pasta with marinara sauce. I love this recipe!!
